Wild Garlic Savoury Muffins

  • 275g self raising flour
  • 125g cheddar cheese, grated
  • 50g parmesan grated
  • 1 red pepper, chopped finely
  • 225ml milk
  • 175g melted butter
  • 2 eggs
  • 1 tsp salt
1. Preheat the oven to 180C. Using an electric whisk, blend together the flour, eggs, milk, butter and salt.
2. Fold in the wild garlic and red pepper and mix in the cheese. Spoon evenly into muffin cases and bake in the oven for 25 minutes or until a skewer inserted into the middle of the muffin comes out clean.
