Salad with a Thai Smooth Peanut Butter Dressing

Serves: 4 people
Cook Time: 25 minutes

Ingredients:

For the Dressing:-
50 grams Whole Earth Foods smooth peanut butter
2 tablespoons olive oil
2 tablespoons rice vinegar
1 tablespoon soya sauce
1 tablespoon honey
1 tablespoon sugar
Juice of 1 lime
2 garlic cloves, chopped
Handful of coriander
1-inch piece of ginger, chopped
Good pinch of salt

For the Salad
1/2 red cabbage
2 carrots
1 courgette
1 red pepper
50 grams edamame beans
2 red spring onions
2 green spring onions
coriander to garnish

Method
1. First make the salad. Shred the cabbage, red pepper and spring onions on a mandoline, and if you have a spiraliser, spiralise your carrot and courgette. Add them to a large bowl and mix to combine. Cook the edamame beans in hot water for no more than 5 minutes, drain and add to the bowl.

2. Next make your dressing. In a food processer combine all the dressing ingredients until smooth. Place in the fridge until ready to serve your salad.
