My late gran used to write down recipe on the corners of bits of newspapers or magazines and keep them in kitchen drawers or stuffed in notebooks. I found this one recently for Cinder Toffee which she had scribbled on the corner of a piece of newspaper. I felt and always will feel very sentimental and emotional when I see her handwriting.
This is the perfect recipe for Bonfire Night. Cinder Toffee is also knows as puff candy or honeycomb or the stuff in the middle of a Crunchie bar. A great treat for around the bonfire.
Here is my gran’s recipe
Prep Time: 5 minutes
Cook Time: 5 minutes plus cooling time
4tbsp golden syrup
225g caster sugar
2 tsp bicarbonate of soda
1. Get all your ingredients measured out and ready as you need to work quick with this recipe. Grease a square tin well.
2. Add the syrup, butter and sugar to a large pan until the butter is melted and the sugar dissolves and the mix begins to simmer. Bring to the boil without stirring the mix for a few minutes…not too long though as you don’t want it to burn.
3. Take the pan off the heat and add in the bicarbonate of soda. Stir and you will see the mix will bubble and swell up very quickly. Pour this mix into your greased pan (don’t wait too long as the mix sets very quickly) and leave it to set for a while until it’s cool.
