Apple Pie & Fudge Muffins

I am still using up all the apples that are falling off my apple trees. There are so many this year. So here is a quick recipe for some delicious seasonal muffins.


300g plain flour
2 tsp’s cinnamon
1 egg
pinch of salt
1 tsp baking powder
250ml buttermilk
150g butter, melted
250g brown sugar
1 tsp vanilla extract
3 chopped apples
100g fudge chunks

1. Preheat the oven to 180C. Line a muffin tin with paper cups.
2. In a bowl, mix together the flour, cinnamon, baking powder and salt. Add in and mix the sugar then the egg, butter and vanilla extract. When it is all mixed evenly together, fold in the apple pieces and the fudge chunks.
3. Fill the muffin cups with the mixture and pop into the oven for 30 minutes or until the tops of the muffins spring back when gently pressed.
4. Cool before eating and store in a sealed container.
